No-Bake Strawberry Shortcake Dessert is a classic, “old school” dessert that uses just a few simple ingredients and comes together in a snap! The shortcake base is topped with loads of fresh, sweet strawberries. Each tart, creamy bite is better than the last!
It’s Freaky Friday time! That’s where a great group of bloggers that I belong to gets together and we each cook or bake a recipe from another blogger’s recipe collection.
This is my third Freaky Friday event. The first time, I made some delicious Mexican Wedding Cookies and the second time, we enjoyed Spiced Bakery Style Ginger Pear Muffins.
The quarterly Freaky Friday event is organized by Michaela with An Affair From The Heart. She draws names to pair each of the participating bloggers with another’s blog. This time, I was assigned to Deanna’s blog – Seduction in the Kitchen. Deanna works in healthcare by day, and she blogs her heart out by night.
Not only is Deanna extremely creative in the kitchen, but she’s a problem solver. She’s very tech-minded and often shares info and resources with the group that answers questions and provides solutions for those of us who are more curious than driven by stats and the latest, greatest Google updates.
Deanna has a wide variety of recipes on her blog. Her Greek Spinach and Feta Chicken Burgers have my attention, and so do her Pear Balsamic Fig Grilled Cheese Sandwiches. She’s also got some amazing soup recipes like Italian Sausage Lentil Soup and a Hawaiian Saimin Soup that I’m dying to try.
Her desserts definitely grab your attention, too. I had a hard time deciding between her Brown Sugar Maple Bars and this strawberry shortcake dessert, but in the end, any excuse to enjoy bright, fresh strawberries got my vote. And so did the story behind the recipe!
Apparently this No Bake Strawberry Shortcake Dessert is out of an old church cookbook… My favorite kind of recipe!
And it’s super simple to make, too! Just combine chunks of pound cake with cream cheese, frozen whipped topping, and powdered sugar. I added a little vanilla to round it all out, spread it into a 9×13″ pan, covered it and popped it into the refrigerator overnight. Just an hour or so before serving, I cut up my strawberries and tossed them in a small bowl with a little more powdered sugar.
This Strawberry Shortcake Dessert is cool and creamy with delicate bites of buttery pound cake throughout. The tart, sweet strawberries are the perfect touch. I made twice as many strawberries as the original recipe called for, and I’d do it again in a heartbeat!

No Bake Strawberry Shortcake Dessert
This No Bake Strawberry Shortcake Dessert is cool and creamy with delicate bites of buttery pound cake throughout and the the tart, sweet strawberries add the perfect touch. If you're looking for a sweet treat that you can make ahead of time for dinner parties, this one's for you!
Ingredients
For the Shortcake Mixture
- 1 16 oz. pound cake - cubed (see note below)
- 8 oz. cream cheese - room temp
- 8 oz. frozen whipped topping - room temp
- 1 cup powdered sugar
- 1 tsp vanilla extract
For the Strawberries
- 1 pound fresh strawberries - washed & quartered
- 1/3 cup powdered sugar
Instructions
For the Shortcake Mixture

In a mixing bowl, beat cream cheese, whipped topping, and 1 cup powdered sugar with a hand mixer. Fold in pound cake cubes. Spread mixture into a 9x13" plan. Cover and refrigerate for several hours, or overnight. Spoon strawberries over the top of each piece just before serving.
For the Strawberries

Wash and trim strawberries, and cut into cubes. Add 1/3 cup powdered sugar, and stir gently to coat. Cover and refrigerate for an hour or so before serving.
Recipe Notes
*I used Sara Lee frozen Family Size All Butter Pound Cake for this recipe. You can find it near other desserts in the freezer section at most grocery stores.
*This dessert keeps well up to three days, covered and refrigerated. The berries may fade a bit on the dessert, so make sure to add them just before serving.
