This recipe features a beautiful Fellers Ranch™ Wagyu Beef Sirloin Steak
The flavor and texture of Fellers Ranch™ Wagyu Beef is exceptional. It’s consistently tender and well-marbled, and it practically melts in your mouth.
Fellers Ranch™ is a partnership between a third-generation family farmer, a 75 year-old family-owned (USDA-inspected) artisan butcher shop, and several seasoned ranchers. Together, they have an exciting new vision based on decades of raising cattle and processing meat. They are all located in south-central Minnesota, which is where their #mngrown cattle are raised. Visit fellersranch.com and @fellersranch for more information about the ranch, products, and ordering information!
While quality Wagyu generally needs very little seasoning, it lends itself particularly well to this Blackened Steak Salad recipe.
#1 Tip for Cooking Wagyu
Wagyu is very different from “regular” beef, so the most important thing to keep in mind when cooking Wagyu is to avoid overcooking it. Watch grill or pan temperatures carefully, and remove it from the heat just before it reaches your desired doneness. The meat will continue to cook slightly (known as “carryover cooking”) while it’s resting.
As you can see, we prefer our beef cooked Medium-Rare, and we almost always grill our steaks.
Use this recipe as a guide. Use whatever cut of beef you prefer most, and prepare it however you like it best.
Not in the mood for beef? Chicken and salmon work well with this recipe, too!
Don’t be afraid to season liberally with blackening seasoning. You want more than a light sprinkling of seasoning mix to coat the meat and create a “crust” of flavor.

White hot coals provide the high heat needed to quickly sear a tender Sirloin!

Serving Suggestions
I like to serve this salad Family Style on one big platter. Place the Romaine lettuce greens first, then add the steak (pre-sliced) on top of the greens. Scatter lots of fresh cherry tomatoes, red onion slices, and blue cheese crumbles over everything. Small dishes of dressing are easy to tuck into the greens so everyone has their own.
If you’re feeding a crowd, you could also do a build-your-own scenario with separate ingredients so everyone can do their own thing.
No matter what, this salad can be made in any quantity, and can accommodate the preferences of everyone at your table. Everything can be prepared ahead, too, so it’s ready to assemble and serve in just minutes. This salad is great served at room temperature, too.
ENJOY!

- 2 - 4 Tbsp. Blackening Seasoning, to taste
- 1 - 2 heads Romaine Lettuce, trimmed and chopped
- 1/4 - 1/2 Small Red Onion, thinly sliced
- 1 pint Mixed Cherry Tomatoes (about 2 - 2-1/2 cups), halved or quartered
- 1/4 - 1/2 cup Blue Cheese Dressing, 2 Tbsp. per person + more to taste
- 8 - 10 Tbsp. Blue Cheese Crumbles, 2 Tbsp. per person + more to taste
Instructions
-
Remove steak from packaging, and pat dry as needed with paper towels. Liberally season both sides and edges with Blackening Seasoning a minimum of 20 minutes (preferably 2 - 4 hours) before cooking. When seasoning several hours in advance, cover and refrigerate the steak. Allow the steak to come to room temperature (20 - 30 minutes) before cooking.
-
Prepare salad ingredients before cooking the steak. Wash and trim Romaine, slice onions, and half or quarter cherry tomatoes. Refrigerate if needed.
-
When ready to cook: Heat grill or grill pan to medium-high heat. Cook the steak for 3 - 5 minutes per side, depending on thickness. Check internal temperature with an instant read meat thermometer: 150 - 160°F for medium rare, and up to 170°F if you prefer well done.
