Homemade Tzatziki
Simple, clean and delicious... This Homemade Tzatziki is so easy to make! Try it with Mediterranean Chili, grilled chicken and lamb, or just grab some warm pita and enjoy!
Ingredients
- 1 medium cucumber halved, de-seeded
- 1 heaping cup Greek yogurt (full fat)
- 2 cloves fresh garlic finely chopped
- 2 Tablespoons olive oil
- 2 teaspoons red wine vinegar
- 1/8 - 1/4 teaspoon sea salt to taste
- 1/8 - 1/4 teaspoon fresh ground black pepper to taste
Instructions
-
Wash cucumber and cut in half. Scrape most of the seeds out, but leave the peel (unless you prefer to peel it). Using a hand grater, shred the cucumber over a plate with several paper towels on it. Lift edges of paper towel and press liquid out of shredded cucumber. Repeat with fresh, dry paper towels until shredded cucumber is "compressed" and just damp (not wet).
-
Place all ingredients in a small bowl (with about a 3-cup capacity). Using a small flexible spatula, combine all ingredients completely making sure all the shredded cucumber is incorporated (no clumps).
-
Cover and refrigerate Tzatziki for 1 - 3 hours, or overnight.
-
Serve chilled.
