My love affair with blackening seasoning began quite a few years ago after enjoying a blackened steak salad at a restaurant. I love the flavorful seasoned steak and how well it balances with the cool greens, creamy blue cheese dressing, and crisp red onions.
Because I loved the salad so much, I re-created it numerous times at home and eventually decided to make my own seasoning. After some recipe research, I discovered that Chef Paul Prudhomme is credited with “inventing” blackening seasoning. As such, this recipe is adapted from Paul Prudhomme’s recipe – much like every other recipe of its kind.

Make It Your Own
The best thing about making seasoning mixes (and dressings) yourself is the fact that you can adjust the ingredients to suit your tastes and dishes!
For example, while salt is a key item in a traditional blackening seasoning, I often make this mix without salt so I can then add salt to my dishes as needed without going overboard.
We use this homemade blackening seasoning on steaks, fish, shrimp, chicken, pork, and vegetables – it goes really well with just about anything. Whether you’re cooking on a grill, in the oven, or on the stove top, you’ll love how flexible and flavorful this seasoning mix is!

Homemade Blackening Seasoning Mix
This blackening seasoning is perfect for steaks, seafood, chicken, pork, and vegetables. Whether you're grilling, or cooking on the stove top or in the oven, you'll love how flexible and flavorful this seasoning is!
Ingredients
- 1 Tbsp. sweet paprika
- 1 tsp. Kosher salt
- 1 tsp. pink Himalayan salt
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 1 tsp. cayenne powder
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 tsp. freshly ground black pepper
- ¾ tsp. ground white pepper
- ¼ tsp. red cracked pepper flakes
Instructions

OPTIONAL: Place dried thyme, oregano, and red cracked pepper flakes in a mortar and pestle and grind until fine before combining with the rest of the ingredients.

Place all ingredients in a small jar and stir or shake to combine.

Store in an airtight container - away from heat and sunlight - for up to six months.
