Arugula Oil (aka That Really Good Green Sauce)
Arugula Oil is a condiment, dressing, drizzle or sauce that adds brightness, fresh flavor and gorgeous green color to just about anything!
I had never heard of anything like it until a similar sauce was served to me at Café Seiche on Madeline Island. They’re known for their steaks, and fresh Lake Superior Whitefish, and salads and desserts, and cocktails – and everything arrives at your table in a beautiful, fresh-from-the-garden presentation.
Our Grilled Beef Tenderloin was surrounded with a vibrant green drizzle, and it was absolutely wonderful! When I asked what it was (after practically licking the plate clean), I was told that it was Parsley Oil – just a simple condiment that they make up with whatever fresh herbs they have on hand.
The restaurant’s Parsley Oil was so fresh and flavorful. It accented both beef and fish so beautifully, and I haven’t stopped thinking about it since.
To be fair, I’m just a bit “obsessed” with all things fresh and green (especially when we’re smack-dab in the middle of a Minnesota winter). After discovering Revol Greens Baby Arugula, I began adding it to everything and decided to come up with an arugula version of the sauce we enjoyed so much at the restaurant.

And here we are!
I love the fact that this Arugula Oil is so bright and beautiful – and versatile! You can play around with the level of heat by adding more cracked red pepper, or bring in some other fresh herbs to accentuate the flavors of specific dishes.

Uses for Arugula Oil (aka “That Really Good Green Sauce”)
- Drizzle on avocado toast, garlic bread, focaccia, and pizza
- Toss with pasta, and add some fresh Parmesan and tomatoes
- It’s delicious with eggs: bennies, omelettes, fried, scrambled
- Add a small sauce bowl of Arugula Oil to cheese and charcuterie trays
- Drizzle in soups, chowders, and broths
- Use as a simple salad or veggie dressing
- Dress fresh greens with Arugula Oil before adding them to sandwiches, pizzas and pasts
- Add to mayo or use alone as a sandwich spread
- Drizzle on steaks, pork chops, salmon, white fish, shrimp, and chicken
- Dress mashed root veggies and cauliflower
- Toss grilled or roasted veggies in Arugula Oil for a pop of bright, delicious flavor
- Use it anywhere you would use a finishing oil or green garnish

Arugula Oil (aka That Really Good Green Sauce)
Arugula Oil is a wonderfully versatile sauce and dressing that adds fresh, fabulous flavor and color to just about anything. Try it on meats, fish & seafood, green salads, breads, sandwiches, charcuterie, soups, breakfast and brunch dishes, and more!
Ingredients
- 1/2 cup neutral oil (light olive oil, canola, grapeseed, etc.)
- 1 cup fresh arugula, lightly packed (I use Baby Arugula from REVOL GREENS)
- 1/4 cup green onions, roughly chopped (just the greens; 4 – 6 stalks)
- 1 - 2 cloves fresh garlic, roughly chopped
- 1/2 lemon - the juice + zest
- 1/4 tsp red pepper flakes, plus more to taste (optional)
- Sea salt and freshly ground black pepper, to taste
Instructions

Place all ingredients in a food processor. Pulse several times to incorporate ingredients and then process in several rounds, stopping to scrape down the sides of the bowl in between. Continue processing until the sauce reaches the consistency you want. I like it to be completely smooth and silky, but it’s just as delicious with a more rustic texture.

Store in an air-tight, glass or other non-reactive in the refrigerator for up to one week. Stir lightly before using.
