This is a fabulously versatile sauce. It’s light and clean with yogurt-y tang, and goes well with fresh or grilled veggies and grilled or roasted meats. It’s great on tacos, burgers and kabobs, and equally delicious with tortilla chips and crackers.
Prep and chop the cilantro, Serrano pepper(s) and lime, then put all the ingredients in a food processor or blender and pulse/blend until completely smooth. The finished sauce has a light, fresh green color with tiny dark green speckles.
Pour into a glass bowl, cover and place into the refrigerator for an hour or so or overnight to allow the flavors to blend through before serving. Taste and add more salt, etc., if needed.
Garnish with more fresh cilantro and lots of fresh lime slices for a pretty presentation. Or, just grab a spoon and enjoy!
*You can use regular yogurt as well
*Definitely adjust ingredient levels to suit your tastes.
*The more lime juice you use, of course, the thinner the sauce will become. If you want a thicker sauce with more lime flavor, use more lime zest.
*The mayonnaise is completely optional, but really adds richness to the recipe.
*This sauce is great right after you make it, but as with most sauces, the flavors intensify with time so make it at least an hour (or a day) before serving.
*Keeps well - covered and refrigerated - for about 3 days.
